Vegan Fluffy Pancake Recipe

Pancake Day may only come around once a year, but in our house we like to make pancakes a regular occurrence. My favorite way to enjoy them is with a generous squeeze of lemon juice and a generous sprinkling of sugar. The way that the sugar crystallizes on the pancakes, creates such a delicious and sweet treat.
These vegan pancakes taste exactly like the real thing. I first had these vegan pancakes when I went on a diary-free diet a few years ago and I’ve been making them ever since. They are so easy to make too.
This pancake recipe itself is really simple to make and only takes a few minutes to cook a whole batch. Simply add all your ingredients into a measuring jug and whisk well. Then add in a little pancake batter to a hot frying pan and cook both sides. Continue this frying process until you have used all your batter.
Topping Ideas For Pancakes
Once you have made your pancakes you’ll need to decide on your toppings. As you already know, I absolutely love lemon juice and a sprinkle of sugar on mine. But when it comes to pancake toppings, the sky is the limit. In my pancake video below, I top the pancakes with freshly sliced strawberries and a large drizzle of maple syrup.

- Nutella and raspberries
- Lemon juice and sugar
- Maple syrup and strawberries
- Mixed berry compote
- Cooked cherries and chocolate sauce.
Last summer I even added rolled up pancakes to our ice cream sundaes. The kids couldn’t decide whether to have pancakes or ice cream for dessert. So, I thought why not have both, then everyone wins lol. I mean, you only live once, right?
What is a vegan substitute for eggs in pancakes?
A vegan substitute for eggs in pancakes can be either a flax egg or a chia egg. To make a flax egg, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water and let it sit for 5 minutes until it thickens. To make a chia egg, mix 1 tablespoon of chia seeds with 3 tablespoons of water and let it sit for 5 minutes until it thickens. Both flax and chia eggs can be used as a 1:1 replacement for eggs in pancakes.
What are vegan pancakes made of?
Vegan pancakes are typically made with ingredients such as flour, non-dairy milk, baking powder, and a sweetener such as maple syrup or agave nectar. Depending on the recipe, other ingredients such as applesauce, mashed banana, and/or ground flaxseed may be used as a binder. In place of eggs, vegan pancakes may also contain ingredients such as mashed tofu, chia seeds, flax seed, or vegan egg replacer.
Vegan Fluffy Pancakes
Ingredients
- 1 cup Flour
- 1 tbsp Granulated sugar
- 2 tbsp Baking powder
- ⅛ tsp Salt
- 1½ cups Vegan milk I used Soya milk
- 2 tbsp Vegetable oil
Instructions
- Add all of the ingredients into a large measuring jug or bowl and whisk together really well.1 cup Flour, 1 tbsp Granulated sugar, 2 tbsp Baking powder, ⅛ tsp Salt, 1½ cups Vegan milk, 2 tbsp Vegetable oil
- Then heat a frying pan over a high heat.
- Add a little oil to the pan, then simply add your batter into the pan (just enough to make one pancake)
- You'll know when to flip your pancake when bubbles pop and form holes that stay open on the surface of your pancake; when this happens use a spatula to flip it over.
- Once golden brown place your pancake on a plate and repeat with the remaining batter until you have it all used up.
- Last but not least. Serve with your favorite toppings, this time I used maple syrup and strawberry's.
