Pancakes don’t just have to be a once-a-year Pancake day treat. In our house we enjoy them all year long. My favorite topping is lemon juice and lots of sugar. I love how the sugar crystalizes on each pancake, it just tastes so good.
These vegan pancakes taste exactly like the real thing. I first had these vegan pancakes when I went on a diary free diet a few years ago and I’ve been making them ever since. They are so easy to make too.
This pancake recipe itself is really simple to make and only takes a few minutes to cook a whole batch. Simply add all your ingredients into a measuring jug and whisk well. Then add in a little pancake batter to a hot frying pan and cook both sides. Continue this frying process until you have used all your batter.
Once you have made your pancakes you’ll need to decide on your toppings. As you already know I absolutely love lemon juice and a sprinkle of sugar on mine. But when it comes to pancake toppings sky is the limit. In my pancake video below, I top the pancakes with freshly sliced strawberries and a large drizzle of maple syrup.

Last summer I even added rolled up pancakes to our ice cream sundaes. The kids couldn’t decide whether to have pancakes or ice cream for dessert. So, I thought why not have both, then everyone wins lol. I mean you only live once right?
