Porridge is a breakfast I grew up with. My mum always said it was one of the healthiest breakfasts that she could give us. That’s why I make it for my kids today, myself included. I love porridge as the sky’s the limit when it comes to toppings. You only need to see my social media to see how many variations of porridge we eat in our house.
This porridge topped with baked peaches is creamy, warming, and delicious. This recipe takes a little time, but the flavor of the baked peaches makes this a breakfast worth waiting for.
I love making baked peaches when they are in season, they are so full of flavor and always extra juicy. We make this baked peach porridge as a treat, usually on a Sunday when we have lots of time on our hands. The scent of the cinnamon wafting around my kitchen as the peaches bake is one of the best smells in the world.
Can you freeze baked peaches?
Yes, you can freeze baked peaches, once they have been baked. Simply leave your peaches to cool completely. Then, arrange the peaches in a single layer in an airtight container and place them in your freezer. When you want to reheat them, place the baked peaches into your fridge and let them thaw overnight.
Cinnamon porridge topped with baked peaches
Ingredients
For the baked peaches you’ll need
- 2 whole Fresh peaches
- 2 tablespoons Butter
- 1 teaspoon Ground cinnamon
- 2 tablespoons Maple syrup
- 1 tablespoon Soft brown sugar
- 1 teaspoon Vanilla extract
For the porridge you’ll need
- 100 g Porridge oats
- 300 milliliters Milk
- ⅛ tsp Salt a pinch
- ½ teaspoon Cinnamon
Instructions
- Preheat your oven to 200 degrees Celsius.
- The first thing to do is cut the peaches in half and take out the pits.2 whole Fresh peaches
- Next add the 2 tablespoons of butter, 1teaspoon of cinnamon, 2 tablespoons of maple syrup, 1 tablespoon of soft brown sugar, and 1 teaspoon of vanilla extract into a bowl and mix the ingredients together.2 tablespoons Butter, 2 tablespoons Maple syrup, 1 tablespoon Soft brown sugar, 1 teaspoon Vanilla extract, 1 teaspoon Ground cinnamon
- Place the peaches into a small Pyrex dish and fill each peach halve with the cinnamon butter mixture.
- Then put your peaches into a preheated oven for 30 minutes.
- When the peaches have been in the oven for twenty minutes it's time to start making the porridge.
- Place the 100g of oats into a saucepan then add 300mls of milk, a pinch of salt, and ½ a teaspoon of ground cinnamon.100 g Porridge oats, 300 milliliters Milk, ½ teaspoon Cinnamon, ⅛ tsp Salt
- Then simply bring to a boil and then let the porridge simmer for 3-4 minutes, keep stirring through the cooking process so that the porridge cooks evenly.
- Take your porridge off the heat and let it stand for 1 minute.
- Take out your baked peaches from the oven and leave these to stand for 1 minute too.
- Grab yourself a couple of bowls and fill them with your cinnamon porridge.
- Then simply top each portion with two baked peach halves and pour over any leftover syrup.
- Now all that’s left to do is sit back and enjoy this delicious breakfast.
