What better way to begin your day than with this beautifully tasty and simple-to-make yogurt, granola, and berry compote parfait? This is an excellent breakfast recipe you can make and enjoy during the summer months. We grow a lot of our own fruit, so we are always looking for ways to use it in the most delicious ways possible.

This yogurt parfait is not a strict recipe, if using fresh berries try and use what’s in season as the compote will always come out tasting heavenly and if you don’t like a certain berry leave it out. The best berries to use for this recipe are strawberries, raspberries, blueberries, cherries, blackberries, and cranberries.

Whenever I make this recipe, I feel like I’ve just had dessert for breakfast. I mean it even looks like a dessert don’t you think? Yogurt parfaits look so beautiful they could be served as a wedding breakfast or even a special brunch.

It saves time to make one big batch of mixed berry compote and use it over a few days. You can even freeze a few small portions too. Once you’ve made up the compote they are so easy to put together and taste absolutely delicious.

Making the compote

This compote is also a not strict recipe, if using fresh berries try and use what’s in season as the compote will always come out tasting heavenly. The best berries to use for compote recipes are strawberries, raspberries, blueberries, cherries, blackberries, and cranberries.

Why do I use plain yogurt?

I use plain yogurt for this recipe because the granola and the mixed berry compote are quite sweet. If you don’t like the taste of plain or even Greek yoghurt maybe try a coconut flavor instead. I think if you added a fruity flavored yogurt to this recipe it might become a little too sweet. But it’s your breakfast so make it using the ingredients you love to eat. Changing ingredient’s

This is such an easy recipe to change up, you can change the mixed berries for chunks of peach, mango, or even banana. The compote layers can be swapped for a rhubarb compote or lemon curd. You can even add a little quinoa into the yogurt or exchange the yoghurt for cream. There are literally hundreds of different flavors to choose from. Have fun experimenting with flavors, skies the limit.

  • The first step in making your yogurt parfait is to add fresh or frozen mixed berries, water, and soft brown sugar into a small saucepan.
    300 g Fresh or frozen mixed berries, 2-3 tbsp of water, 1 tbsp Soft brown sugar
  • Cook over a low heat and simmer for around 30 minutes.
  • Stir occasionally so it doesn’t stick to the bottom of the saucepan.
  • When it’s finished cooking put it to one side to cool (It will thicken a little more as it cools too).
  • Grab yourself a couple of glasses and simply layer yogurt, mixed berry compote, and granola, repeat the layers until they almost reach the top of the glass.
    150 g Plain yoghurt, 50 g Your favorite granola
  • To finish simply garnish with fresh berries and I sprig of mint.

Notes

Tips and Tricks
Remember if you want to get that awesome symmetrically pleasing look, you have to fill and stack each parfait evenly in layers. That way your breakfast parfaits will certainly impress. 
If you want to add a little more flavor to the compote, add half a teaspoon of ground cinnamon.
You can use any yogurt you like it doesn’t have to be plain.
