Mornings can get a little crazy, especially if I’ve got a gym session to hit before the day gets started. That’s when these breakfast burritos come in handy! Not only do they pack a ton of delicious flavors and energy, but they’re also perfect for meal prepping.

I’ve always been a fan of making my mornings as stress-free as possible, and these burritos fit perfectly into my routine. Whether I’m rushing out the door to hit the gym or need something quick and filling, they are the perfect breakfast.

Here’s how I make breakfast burritos

I start by baking the hash brown patties in the oven while I scramble the eggs. I make sure to add a dash of milk to the eggs to make them nice and creamy. Once the hash browns are crispy, I chop them up and mix them with the scrambled eggs. A couple of spoonful’s of thick salsa, and my filling is ready to go.
Next, I take my tortillas and fill them with the egg and hash brown mixture. I fold them up tightly and toast the burritos in a skillet to get a nice crisp on the outside. These burritos are so satisfying, and each bite is packed with protein, carbs, and just the right amount of flavor.

How to Wrap a Burrito

Wrapping a burrito might seem tricky at first, but with the right technique, it’s super easy! Start by placing your filling in the center of the tortilla, making sure not to overfill—leave some space around the edges for folding. Fold the sides of the tortilla inward over the filling, then take the edge closest to you and fold it up and over the filling. Tuck it in tightly as you roll the burrito away from you, keeping everything snug. The beauty of these breakfast burritos is how versatile they are—you can easily adjust the recipe to suit your taste. Love cheese?   • Preheat your oven to 200°C.
    Preheat oven 200 degrees Celsius or 400 degrees
  • Arrange the hash brown patties on a baking sheet and bake for 20 minutes or according to the package instructions.

  • While the hash browns are baking, prepare the scrambled eggs. In a skillet, melt butter over medium heat.

  • In a jug, whisk the eggs with a dash of milk and season with salt and pepper.

  • Add the egg mixture to the skillet and cook gently, stirring with a rubber spatula to form soft, creamy curds. Once cooked through, transfer the scrambled eggs to a large mixing bowl.

  • Prepare the filling by chopping the crispy hash browns into smaller pieces.

  • Mix them with the scrambled eggs. Stir in 2-3 tablespoons of salsa and adjust the seasoning to taste.

  • To assemble the burritos, place an equal portion of the egg mixture on the bottom third of each tortilla. Fold in the sides, tuck in the corners, and roll the burrito tightly.
