When the cherries are in season I always make up a huge batch of cherry sauce and use it in a variety of dishes over the week. This Cherry sauce looks and tastes heavenly. I know that your going to fall in love with this super simple cherry recipe.

Health Benefits of Cherries?

Cherries have many health benefits; they are rich in antioxidants. Antioxidants are substances that may protect your cells against free radicals. These play a role in illnesses such as heart disease and some types of cancers. Cherries also have anti-inflammatory properties, too; they are packed with fiber and vitamin C. I’ve even heard that cherries can improve your sleep.

Can I use canned or frozen cherries instead of fresh?

You can use frozen cherries if you wish, you’ll need to use slightly less water (around 50mls) and cook over a medium heat for a few extra minutes. Canned cherries are I bit different to work with as they are normally canned in a light syrup, so using them to make this sauce might alter the taste and may turn out a little to sweet. I personally wouldn’t recommend using canned cherries, but it wouldn’t be the end of the world if that’s all you had to hand. If the canned cherries do come in a light syrup, maybe don’t add as much sugar and use slightly less water just like the frozen cherries, probably around 50mls. I hope this helps.

This cherry sauce recipe is perfect for topping and filling all kinds of desserts, anything from cherry pies to topping chocolate brownies. Its quick and super easy to make too.

  • Wash and pit the cherries.
    450 g Pitted cherries
  • Into a small saucepan add in the water, cornstarch, lemon juice and sugar and whisk together.
    60 ml Water, ½ tbsp Cornstarch, ½ tbsp Lemon juice, 1 tbsp Sugar
  • Heat the sweet mixture over a medium heat, keep whisking until it starts to thicken.
  • Now add in your cherries and bring to a light boil, stirring occasionally until the cherry sauce has thickened. This should take about 8-10 minutes.
  • Remove your cherry sauce from the heat and cool at room temperature, it will thicken as it cools.
  • Once cool transfer your cherry sauce to a glass storage jar/container and cover, store it in the fridge until ready to use.
