Christmas Eve Box Treats

Last Christmas Eve, we indulged in delightful Reindeer cupcakes as part of our tradition. Each year, I create a Christmas Eve box for my kids, filled with festive PJs, cocoa powder, marshmallows, and, of course, Christmas cupcakes. The box also contains treats for Santa and his reindeer, like carrots, a thank-you letter, and a thermos flask of hot milk. After the kids are in bed, I enjoy a second hot chocolate with the leftover milk while watching Christmas movies. Christmas Eve is almost as enjoyable as Christmas day, if not more so.

To make the cupcakes

  • Before you start making your reindeer cupcake mix, the first thing to do is preheat your oven to 190°c or 375°f
    Preheat oven 190 degrees
  • Second line your muffin tin with paper cupcake cases. Grab yourself a large mixing bowl or stand mixer. Add the butter and start to cream the butter for a couple of minutes until it’s smooth and creamy.
    250 g Unsalted butter
  • Then add in the caster sugar and give it another good mix until its all creamed together.
    250 g Caster sugar
  • Add in the eggs one at a time and beat your cupcake mix on a high speed.
    4 Medium Eggs
  • Add in the milk and vanilla extract and mix again.
3 tablespoons Milk, 1 teaspoon Vanilla extract
  • Lastly add in the flour and salt, mix on a medium speed for a minute until the cupcake mixture is well incorporated.
    250 g Self-raising flour, 1 Pinch Salt
  • Divide your Christmas cupcake batter between the cake cases filling each one up ¾ full.
  • Bake your cupcakes for 18-20 minutes in your preheated oven. To test if the cupcakes are cooked, simply poke the center of one of the cakes with a skewer. If it comes out clean its done, if there is a little cake batter stuck to it, pop it back into the oven for a couple more minutes.
  • Once baked leave the cupcakes in the muffin tin for a few minutes to cool before transferring them to a wire rack to finish cooling properly.

How to decorate the Red Nose Reindeer cupcakes

  • First add in the icing sugar, cocoa powder, vanilla extract and water into a mixing bowl and stir until you have a smooth chocolate glaze icing (you may need to add in a little more water to get a runnier consistency).
150 g Icing sugar, 27 g Cocoa powder, 1 teaspoon Vanilla extract, 3 tablespoons Water
  • Add about a teaspoon of glaze icing to the top of each vanilla cupcake.
  • Now for Rudolph’s face, you’ll need to make the eyes from the white and black fondant icing. Simply make two white circles using your white fondant icing. Then make two smaller black circles and stick them together with a drop of water so they look like eyes (make 24 eyes altogether).
    20 g White fondant, 20 g Black fondant
  • Next the famous red nose, use the red fondant and roll it into 12 small round balls.
    250 g Red fondant
  • Lastly brake up a few pretzels so they resemble antlers, place the antlers, eyes and red noses onto each cupcake. There you have it, Rudolph the red nose reindeer cupcakes. These cupcakes not only look super cute but they taste amazing too.

Notes

Tips & Tricks
Make sure the vanilla cupcakes have fully cooled before adding the Reindeer toppings, as the chocolate glaze wont set properly.
When making the eyes out of the fondant use a tiny drop of water to hold the eyes together.
You could also buy candy eyes if you don't have time to make tiny fondant eyes.
Breaking the pretzels can sometimes be a little tricky so if your having trouble just add to whole pretzels to each cupcake instead.
