  • Pit the cherries if they are not already pitted.
    400 Grams Cherries
    Cherry Compote
  • In a saucepan, combine the cherries, caster sugar, lemon juice, and water. Stir well to mix the ingredients. Place the saucepan over medium heat and bring the mixture to a simmer.
    60 Grams Caster sugar, 1 Teaspoon Lemon juice, 2 Tablespoons Water

  • Let the cherry mixture simmer for about 15 minutes, stirring occasionally with a spatula. The cherries should soften, and the liquid should thicken slightly.

  • Remove the saucepan from heat and allow the compote to cool slightly. Transfer the compote to a glass storage container. You can serve it warm or refrigerate it until needed.

Tips and Tricks
Pitting Cherries: If you don't have a cherry pitter, you can use a straw or chopstick to push the pits out.
Sweetness: Adjust the amount of sugar to your taste preference. If your cherries are very sweet, you might use a bit less sugar.
Consistency: If you prefer a thicker compote, simmer it a bit longer or mash some of the cherries with the back of your spatula.
Serving Suggestions: Cherry compote is perfect for topping pancakes, waffles, yogurt, ice cream, or even as a filling for pastries.
