Cherry Brownies
These decadent Chocolate Cherry Brownies are a take on a classic brownie recipe. Filled with vibrant juicy cherries that add a burst of fruity flavor!

Cherry Brownies

- 250 Grams Cherries washed, cut in half and pitted
- 300 Grams Dark chocolate for melting
- 340 Grams Self raising flour
- 3 Tablespoons Cocoa powder heaped
- 306 Grams Caster sugar
- Pinch Salt
- 1 Tablespoon Vanilla extract
- 60 Milliliters Sunflower oil
- 460 Milliliters Unsweetened soya milk you can use whatever kind of milk you like
Instructions
- First, preheat your oven to 180°C
- Next, prepare a large Pyrex dish, grease it with a little butter or oil, line it with parchment paper, and set it to one side.
- Now break 300g of dark chocolate into a separate glass Pyrex bowl, and heat over a pan with simmering water; stir until melted. Then set it to one side.300 Grams Dark chocolate
- Into a large mixing bowl or stand mixer add the self-raising flour, cocoa powder, caster sugar, and a Pinch of salt.340 Grams Self raising flour, 3 Tablespoons Cocoa powder, 306 Grams Caster sugar, Pinch Salt
- Then, in a measuring jug add in your milk, vanilla extract, and sunflower oil, and give it a little stir.1 Tablespoon Vanilla extract, 60 Milliliters Sunflower oil, 460 Milliliters Unsweetened soya milk
- Add the wet ingredients to the dry ingredients and mix well.
- Once mixed, pour in your delicious melted chocolate that we set to one side.
- Next, add in your cherry halves and mix again. When the mixture is well incorporated, grab your prepped dish, and fill it up with your gorgeous gooey chocolate brownie mixture.250 Grams Cherries
- Now, spread out the brownie mixture, so it's all even.
- Put it in the oven at 180°C for 35 minutes.
- To test if your brownie is cooked properly, using a cocktail stick or skewer, poke it into the center of the brownie and pull it out. If there is no gooey mixture on it, it's done. If there is a little gooey mixture on it, simply pop it back in the oven for a couple more minutes and test again.
- Once cooked leave in the dish to cool.
- When the brownie has cooled off, remove it from the dish, peel back the parchment paper, and chop it into squares.
- That’s it, you’re ready to serve and enjoy.

Cherries and chocolate are such a lovely combination and complement each other perfectly. This cherry brownie recipe takes the classic brownie and gives it a delicious fruity wow factor. These cherry brownies literally fly off the plate every time I make them.
What kind of chocolate is best for brownies?
When it comes to baking chocolate brownies, I found that the best chocolate to use is dark chocolate. The 70% dark chocolate tastes lovely with most brownie recipes, as the sweetness of the sugar balances out the darkness of the chocolate. You can, of course, use 90% or even milk chocolate, but personally I find the 90% dark chocolate tastes a little bitter and the milk chocolate is a little too sweet. Stick with around 70% dark chocolate and you’ll always have the best brownies.
Can I add canned or frozen cherries to brownies?
Yes! Both canned or frozen cherries will work well in this cherry brownie recipe. If you’re using canned cherries, be sure to drain them properly first. You can save the sweet cherry juice from the can, and drizzle it over the brownies after they have finished baking and you’re ready to serve. It tastes delicious with a scoop of vanilla ice cream and a drizzle of canned syrup to top them off. The great news is if you’re planning on using frozen cherries, you won’t need to defrost them first, just add a couple of extra minutes to the cooking time.
Vegan Brownie recipe
This cherry brownie recipe is actually a vegan-friendly recipe. All the ingredients I used were dairy-free and egg-free. If you don’t want to add in soya milk, you can add any dairy-free milk you like, whatever you have to hand will probably be fine. What is a Cherry Pitter?
If you love adding fresh cherries to your cooking, then buying a cherry pitter is a must. De-pitting cherries by hand can be very fiddly and quite time consuming too. Purchasing a cherry pitter like this is inexpensive and easy to use. Simply pull the stem off of the cherry, put the cherry in line with the punch bar, and squeeze, the cherry pit pops out the bottom, and you're done, it's that easy. If you have kiddies that love to help you cook, this is a great job to give them. This handy kitchen gadget is also perfect for removing the pits from olives too.
How to store brownies?
Brownies are best stored at room temperature in an airtight container or lidded cake stand; you can also wrap them in plastic kitchen wrap or foil. Storing them like this will prevent your brownies from going stale or coming into possible contact with any contaminants. Homemade brownies will last between 4 to 5 days if stored correctly. An interesting fact about brownies is that they actually taste better the day after they're cooked, as the cooling process helps them to lock in the flavors much better.
