Christmas Pudding Cupcakes
Equipment
Ingredients
For the cupcakes
- 250 g Unsalted butter room temperature
- 250 g Caster sugar
- 250 g Self-raising flour
- 1 Pinch Salt
- 4 Medium Eggs
- 3 tablespoons Milk
- 1 teaspoon Vanilla extract
For the chocolate glaze icing
- 150 g Icing sugar
- 27 g Cocoa powder
- 3 tablespoons Water you may need a little more water if your looking for a runnier consistency
- 1 teaspoon Vanilla extract
For Xmas pudding decorations
- 240 g White fondant icing
- 240 g Green fondant
- 60 g Red fondant
Instructions
How to make the cupcakes
- The first step to making these pudding cupcakes is to preheat your oven to 190 °c or 375 °F.
- Then line a muffin tin with paper cupcake cases.
- Grab yourself a large mixing bowl or stand mixer and start to cream the butter for a couple of minutes until it’s smooth and creamy.250 g Unsalted butter
- Then add in the caster sugar and give it another good mix until its all creamed together.250 g Caster sugar
- Next, add in the eggs one at a time and beat the cupcake mix on a high speed.4 Medium Eggs
- Add in the milk and vanilla extract and mix again.3 tablespoons Milk, 1 teaspoon Vanilla extract
- Lastly, add in the flour and salt, mix on a medium speed for a minute until the cake mixture is well incorporated.250 g Self-raising flour, 1 Pinch Salt
- Divide the cupcake batter between the cake cases filling each one up ¾'s of the way full.
- Bake for 18-20 minutes in your pre-heated oven. To test if the cupcakes are cooked, simply poke the center of one of the cakes with a skewer, if it comes out clean its done. If there is a little cake batter stuck to it, pop it back into the oven for a couple more minutes.
- Once baked leave the cupcakes in the tin for a few minutes to cool before transferring them to a wire rack to finish cooling properly.
To decorate the cupcakes
- First add in the icing sugar, cocoa powder, vanilla extract and water into a mixing bowl and stir until you have a smooth chocolate glaze icing (you may need to add in a little more water to get a runnier consistency).150 g Icing sugar, 3 tablespoons Water, 1 teaspoon Vanilla extract, 27 g Cocoa powder
- Add about a teaspoon of glaze icing to each of the vanilla cupcakes.
How to make the Christmas pudding decorations
- Next, shape the white fondant to look like the white sauce used on Christmas puddings and place each one on top of the chocolate icing.240 g White fondant icing
- Roll out the green fondant and cut holly leaf shapes. Then add two leaves to the top of each Christmas-themed cupcake.240 g Green fondant
- Now shape the red fondant into small red balls, so they are about the size of berries. Again, add two to each cupcake. You have finished the ultimate Christmas pudding cupcakes; all that’s left is to enjoy.60 g Red fondant
