This lemon drizzle cake has always been one of my mum's favorite bakes, and it never lasts long in our house. The last time she made it, we sat outside in the sunshine with a couple of margaritas, chatting and slicing into the cake. There were only four of us, but somehow we still managed to finish the whole loaf before the afternoon was over.
The cake has a soft, buttery crumb with bright lemon flavor running through every slice. The warm lemon drizzle soaks into the cake, adding sweetness and keeping each bite moist. If you choose to add the optional glaze, it creates a smooth citrus finish that makes the loaf look just as inviting as it tastes.

I also love how straightforward this recipe is. The ingredients come together into a smooth batter, and the drizzle transforms the finished loaf with very little extra effort. One small step that really makes a difference is letting the lemon zest sit with the sugar before mixing. It naturally builds a deeper lemon flavor, although the cake still turns out beautifully if you need to skip the wait.

Tips for the Best Texture and Lemon Flavor

Let the lemon zest flavor the sugar

If you have the time, let the lemon zest sit with the sugar before mixing the batter. This simple resting step helps the sugar absorb more of the lemon oils, giving the finished cake a brighter citrus flavor. If you are short on time, you can skip it and still make a delicious loaf.

Watch for the right baking and drizzling cues

Mix the batter until it is smooth, fluffy, and evenly combined using the electric mixer. Before baking, smooth the top with a spatula so the loaf bakes evenly.
Check the center with a toothpick after about 50 minutes. When it comes out clean, let the cake cool in the pan for 5 minutes before making the drizzle.
While the cake is still warm, use a skewer to poke holes across the top. This allows the lemon drizzle to soak into the loaf instead of sitting on the surface. Once the cake has cooled completely, remove it from the pan before adding the optional glaze. Whisk the powdered sugar with the lemon juice until it is thick but pourable, then drizzle it over the cooled cake and let it set before slicing.

Variasi

Enjoy it with just the lemon drizzle

For a lighter finish, skip the optional glaze and enjoy the cake with only the lemon drizzle soaked into the loaf. The citrus flavor still shines through, and the texture stays wonderfully moist.

Serve with fresh berries

Top each slice with fresh strawberries, raspberries, or blueberries when serving. The fresh fruit complements the citrus flavor and makes this loaf feel perfect for spring and summer gatherings.

Mengatasi masalah

The cake is not soaking up the drizzle

Poke the holes while the cake is still warm, then spoon the drizzle over the surface. This helps the syrup soak into the loaf instead of remaining on top.

The glaze is too thick or too thin

Start with 1 teaspoon of lemon juice and whisk until smooth. If needed, add a little more lemon juice until the glaze becomes thick but still pours easily over the cooled cake.

Saran penyajian

This cake is delicious served on its own, but it also pairs beautifully with a hot cup of coffee or tea. For a warm afternoon outside, it is equally enjoyable with a chilled margarita, just as my family likes to serve it. Whether you are sharing it with friends or family, it is an easy loaf to slice and enjoy together.

Pertanyaan yang sering diajukan

Can I skip letting the lemon zest sit with the sugar?

Yes. Letting the zest sit with the sugar helps create a stronger lemon flavor, but the cake will still bake well if you skip this step. It is a nice extra when you have the time.

How do I know when the cake is fully baked?

Insert a toothpick into the center of the loaf after about 50 minutes of baking. If it comes out clean, the cake is ready to come out of the oven.

Why should I poke holes in the cake before adding the lemon drizzle?

Poking holes while the cake is still warm allows the lemon drizzle to soak into the loaf. This helps distribute the lemon flavor throughout the cake instead of leaving it on top.

Do I have to add the optional glaze?

No. The cake is delicious with just the lemon drizzle soaked into the loaf. The optional glaze simply adds a sweeter finish and an extra layer of lemon flavor.

When should I remove the cake from the loaf pan?

Let the cake cool completely before removing it from the loaf pan. This helps it hold its shape and gives the optional glaze a smooth surface to drizzle over.
