What is cold brew, and why do I swear by it?

Unlike traditional iced coffee, which is simply hot coffee poured over ice (and often diluted), cold brew is made by steeping coarsely ground coffee beans in cold water for 12 to 24 hours. In my opinion, absolutely. For starters, cold brew tends to be lower in acidity, which can be gentler on the stomach. It’s also easy to customize. If you’re watching sugar or dairy, you’re in full control. Plus, cold brew gives me the energy boost I need without the jittery spike I sometimes feel from hot espresso drinks.
I’ve also started using cold brew in other recipes, think smoothies, overnight oats, or even desserts like coffee popsicles. It’s incredibly versatile and, honestly, kind of addictive (in the best way).
