There is something enchanting about carefully layering cold, creamy scoops of vegan ice cream in a tall sundae glass. Each component adds contrast—tender banana slices nestled beside crisp chocolate shards, golden caramel pooling at the bottom, and vegan ice cream melting into the spaces in between. I first created this sundae on a sunny Sunday afternoon with nothing but my retro dessert glass and a long-handled spoon. I used the brand-new Ben & Jerry’s Vegan Coconutterly Caramel’d ice cream, a coconut based pint swirled with caramel ribbons. With that first scoop, I felt a rush of excitement and creativity. How to Assemble Your Sundae

  1. Drizzle the Askey’s chocolate topping along the sides of a chilled sundae glass, letting some pool at the bottom.
  2. Add the first scoop of ice cream, pressing gently into the sauce.
  3. Fan several banana slices on top of the ice cream.
  4. Place a second scoop of ice cream atop the banana layer.
  5. Break pieces of chocolate and salted caramel slab and tuck them around the ice cream.
  6. Add another ring of banana for visual symmetry.
  7. Top with two Biscoff biscuits standing upright for crunch and height.
  8. Pause for a moment to allow the elements to settle, then dig in.

Tips and Tricks
Leave your tub of vegan ice cream out for about five minutes, it will make it a little softer and easier to scoop.
Use a proper ice cream scoop, I didn’t have one at the time and getting the ice cream out wasn’t easy.
