Fluffy Banana Pancakes

There’s something undeniably comforting about starting the day with a stack of fluffy banana pancakes. Whether it’s the sweet aroma of ripe bananas or the golden, pillowy texture of each bite, this is the kind of breakfast that feels like a warm hug. I’ve made this recipe countless times, and every time I do, it reminds me why I fell in love with it in the first place.

Why You’ll Love This Recipe

Bananas are truly the star of the show here. Not only do they add natural sweetness, but they also keep the pancakes moist and tender. This recipe strikes the perfect balance—light and fluffy, with just the right hint of banana flavor. And the best part? It’s incredibly easy to make.

Ingredients You Always Have on Hand

When I whip up these pancakes, I feel like I’m indulging in something special, yet they’re made with ingredients I always have on hand. Flour, sugar, baking powder, and a pinch of salt form the base. Then, the magic happens when you mix in the mashed banana, a splash of milk, an egg, and a drizzle of sunflower oil. The batter comes together in minutes, making it ideal for those lazy mornings when you want something delicious without too much effort.

Tips for Perfectly Fluffy Pancakes

One trick I’ve learned over the years is to let the batter rest for a few minutes before cooking. This gives the baking powder time to do its thing, ensuring the pancakes puff up beautifully on the griddle. Trust me, it’s worth the wait!
I also recommend using a non-stick pan or an electric griddle for cooking. Heat it up to medium-high, and once it’s hot, scoop the batter in small rounds. You’ll know it’s time to flip when you see bubbles forming on the surface and the edges look set. A quick flip, another minute or two, and you’ll have perfectly golden pancakes ready to serve.

Toppings

Now, let’s talk toppings. I like to keep it classic with a drizzle of maple syrup and a few slices of fresh banana, but the options are endless. Fresh berries, a dollop of whipped cream, or even a sprinkle of chocolate chips can take these pancakes to the next level.

  • Adjust the heat as needed to avoid burning; medium heat is usually ideal.
  • If you don’t have sunflower oil, melted butter or another neutral oil works well.
  • Make sure your pan is fully heated before adding the batter to ensure even cooking.
