  • Begin by preparing your ingredients. Peel and cube the watermelon, chop the cucumber, mint leaves, and feta.
    1 Medium Watermelon, 1 Cucumber, 1 Handful Mint leaves, 200 Grams Feta

  • Whisk together the extra virgin olive oil, lemon juice, Dijon mustard, minced garlic, honey, salt, and pepper to make the dressing in a small bowl. Set aside.
    3 Tablespoons Extra virgin olive oil, 1 Lemon, 1 Teaspoon Dijon mustard, 1 Teaspoon Garlic, 1 Teaspoon Honey, Pinch Salt, Pinch Pepper
  • Combine the cubed watermelon, chopped cucumber, rocket leaves, mint leaves, and crumbled feta in a large serving bowl.

  • Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
  • Serve immediately and enjoy!
