Watermelon and Feta Salad
Ingredients
- 1 Medium Watermelon peeled, cut into cubes
- 1 Cucumber
- 80 Grams Rocket leaves
- 1 Handful Mint leaves Remove stalks
- 200 Grams Feta
For The Dressing
- 3 Tablespoons Extra virgin olive oil
- 1 Lemon Juiced
- 1 Teaspoon Dijon mustard
- 1 Teaspoon Garlic minced
- 1 Teaspoon Honey
- Pinch Salt
- Pinch Pepper
Instructions
- Begin by preparing your ingredients. Peel and cube the watermelon, chop the cucumber, mint leaves, and feta.1 Medium Watermelon, 1 Cucumber, 1 Handful Mint leaves, 200 Grams Feta
- Whisk together the extra virgin olive oil, lemon juice, Dijon mustard, minced garlic, honey, salt, and pepper to make the dressing in a small bowl. Set aside.3 Tablespoons Extra virgin olive oil, 1 Lemon, 1 Teaspoon Dijon mustard, 1 Teaspoon Garlic, 1 Teaspoon Honey, Pinch Salt, Pinch Pepper
- Combine the cubed watermelon, chopped cucumber, rocket leaves, mint leaves, and crumbled feta in a large serving bowl.80 Grams Rocket leaves
- Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
- Serve immediately and enjoy!
Notes
- For extra freshness, chill the watermelon cubes and cucumber in the refrigerator before assembling the salad.
- Feel free to customize the salad by adding alternative ingredients such as red onion slices or cherry tomatoes.
- If you prefer a sweeter dressing, add a little more agave honey to taste.
