  • Start by preparing the ingredients. Wash the mint leaves and cucumber.
    1 Handful Fresh mint leaves, 1/2 Medium Cucumber

  • Finely chop the mint leaves and grate the cucumber using the cheese grater. Squeeze out excess moisture from the grated cucumber.

  • In a mixing bowl, combine the grated cucumber, chopped mint leaves, and vegan Greek yogurt.
    1/2 Lemon, 1 Teaspoon Garlic, 400 Milliliters Vegan Greek yogurt

  • Squeeze the juice from half a lemon into the bowl. Be careful to catch any seeds.

  • Add minced garlic to the mixture and stir well to combine.

  • Transfer the vegan tzatziki to a serving dish and serve.
