Vegan Tzatziki
Ingredients
- 1 Handful Fresh mint leaves remove the stalks
- 1/2 Medium Cucumber
- 1/2 Lemon juiced
- 1 Teaspoon Garlic minced
- 400 Milliliters Vegan Greek yogurt
Instructions
- Start by preparing the ingredients. Wash the mint leaves and cucumber.1 Handful Fresh mint leaves, 1/2 Medium Cucumber
- Finely chop the mint leaves and grate the cucumber using the cheese grater. Squeeze out excess moisture from the grated cucumber.
- In a mixing bowl, combine the grated cucumber, chopped mint leaves, and vegan Greek yogurt.1/2 Lemon, 1 Teaspoon Garlic, 400 Milliliters Vegan Greek yogurt
- Squeeze the juice from half a lemon into the bowl. Be careful to catch any seeds.
- Add minced garlic to the mixture and stir well to combine.
- Transfer the vegan tzatziki to a serving dish and serve.
Notes
- For a more intense flavor, allow the tzatziki to chill in the refrigerator for at least 30 minutes before serving.
- If you prefer a smoother consistency, you can blend the mixture briefly in a food processor.
