Instructions
Start by preparing the ingredients. Wash the mint leaves and cucumber.
1 Handful Fresh mint leaves,
1/2 Medium Cucumber
Finely chop the mint leaves and grate the cucumber using the cheese grater. Squeeze out excess moisture from the grated cucumber.
In a mixing bowl, combine the grated cucumber, chopped mint leaves, and vegan Greek yogurt.
1/2 Lemon,
1 Teaspoon Garlic,
400 Milliliters Vegan Greek yogurt
Squeeze the juice from half a lemon into the bowl. Be careful to catch any seeds.
Add minced garlic to the mixture and stir well to combine.
Transfer the vegan tzatziki to a serving dish and serve.
Notes
Tips and Tricks
For a more intense flavor, allow the tzatziki to chill in the refrigerator for at least 30 minutes before serving.
If you prefer a smoother consistency, you can blend the mixture briefly in a food processor.
