Ingredients
 
 

  • 900 Grams Watermelon Cubed seedless (about a 5-pound whole watermelon)
  • 20 Grams Mint leaves (Fresh and loosely packed)
  • 180 Milliliters Lime juice Freshly squeezed (from 4 to 5 limes)
  • 120 Milliliters Simple syrup
  • 360 Milliliters Light rum
  • Lime wheels fresh mint sprigs, and watermelon wedges (for garnish)

Instructions
 

  • Place the cubed seedless watermelon in a blender and blend until smooth. This should yield about 900 milliliters of watermelon puree.

  • Pour the blended watermelon through a mesh strainer into a large jug to remove any pulp, leaving you with smooth watermelon juice.
  • Lightly crush the fresh mint leaves using a muddler or the back of a spoon, then add them to the watermelon juice in the jug. Stir gently to release the mint's flavor.

  • Pour the freshly squeezed lime juice, simple syrup, and light rum into the jug with the watermelon juice and mint. Stir well to combine all the ingredients.
    180 Milliliters Lime juice, 120 Milliliters Simple syrup, 360 Milliliters Light rum
  • Fill cocktail glasses with ice and pour the watermelon mojito mixture over the ice. Garnish each glass with a lime wheel, a sprig of fresh mint, and a watermelon wedge.

Notes

Tips and Tricks
  • You can adjust the sweetness by adding more or less simple syrup to suit your taste.
  • For a cooler drink, you can chill the jug of mojito mixture in the refrigerator for about an hour before serving.
