The best potato salad recipe, creamy, easy-to-make, makes the perfect potato side dish, to use all year round.
This simple potato salad recipe is a bit different from most as it uses two very famous condiments, mayonnaise, and salad cream, instead of a whole list of ingredients to keep you busy in the kitchen. I came up with the potato salad ingredients for this recipe a few years ago, when hosting a family BBQ. I asked myself which condiment I use? My dad had always made his homemade potato salad with mayonnaise and my mother-in-law had always used salad cream. Both variations are delicious and I love them both equally. The only answer was to, of course, use both. Needless to say, my potato salad recipe was a huge success and I've been making it ever since, with a few tweaks here and there for perfection, there's always an empty serving dish.
Is potato salad served hot or cold?
Potato salad is most frequently served cold alongside side salads and cold meats, and of course, offered as a side dish at summer BBQs. Potato salad is normally stored in the fridge until it's ready to serve. German traditional potato salad recipes were typically made just before eating and served warm. So depending on how you like your potato salad, you can eat it warm, at room temperature, or chilled. But remember, potato salad shouldn't be left out longer than 3 to 4 hours for food safety reasons, as mentioned above.
What type of potatoes are best for potato salad?
It can be overwhelming when it comes to choosing the best potatoes for your potato salad. No one wants a potato salad that resembles mash. But in honesty, there's no right or wrong answer; it's really down to personal preference. Out of all the potatoes I found waxy potatoes are the best for this type of recipe as they tend to maintain their structure and shape while also offering a slightly soft and creamy texture after the boiling process. New potatoes or salad potatoes work well if you prefer to keep the skins on. But my go-to potatoes are Irish Rooster potatoes as they are very versatile and can be used in so many recipes, they can be boiled, mashed, chipped, roasted, steamed, and baked.
How do you make the perfect Potato Salad?
The trick to making the perfect potato salad is to chop the potatoes into bite-size pieces and simmer them in water until just tender, strain, and leave to cool for around 10 to 15 minutes, then add on your sauce. Never overcook potatoes as they will cause the potatoes to become too soft and unable to hold their structure, basically, turning to mash.
How to store potato salad?
Once you have made your homemade potato salad recipe, you can pop it into an airtight container and place it in the fridge for up to 5 days. Unfortunately, potato salad doesn't freeze well, so don't even try! Trust me on this one. If you're planning on serving potato salad at a summer BBQ or outdoor gathering, it's best to keep it in a cool area and out of the sunshine. Potato salad shouldn't be left out longer than 3 to 4 hours, as it's notorious for food poisoning; potatoes are a happy environment for bacteria growth, remember safety first.
If you are using new potatoes or small salad potatoes you can leave the potato skins on and it won't affect the texture or taste of the dish. However, if you're using Irish Rooster potatoes or if you live in America, Russet potatoes or anything similar, then yes, you'll need to peel the potatoes before you boil them. This is because the skins are too thick to leave on and would make the potato salad texture unbalanced and even be a little chewy.
It's best practice to always peel and dice your potatoes into bite-size cubes before you boil them. Cooking your potatoes this way ensures that they cook evenly and produce the perfect potato salad. As a side note salting the boiling water when cooking your potatoes not only seasons them but allows them to boil to a hotter temperature, which means they ultimately cook faster and taste better.

Potato Salad Recipe
Ingredients
- 6 Irish Rooster potatoes
- 80 Milliliters Mayonnaise
- 60 Milliliters Salad cream
- ¼ Teaspoon Salt
- 1 Pinch Ground black pepper
- 3 Spring onions Chopped
Instructions
- Start by peeling and chopping your potatoes into bite-sized-sized cubes.6 Irish Rooster potatoes
- Place your chopped potatoes into a saucepan of lightly salted boiling water, and cook over a high heat for about 15 minutes.
- Once the potato cubes are just tender, take them off the heat and strain the water.
- Add the potatoes to a mixing bowl and set to one side for around 10 minutes to cool.
- When the potatoes have cooled, into the mixing bowl, add your mayonnaise, salad cream, chopped spring onions, salt, and black pepper.80 Milliliters Mayonnaise, 60 Milliliters Salad cream, ¼ Teaspoon Salt, 1 Pinch Ground black pepper, 3 Spring onions
- Gently mix until all the ingredients are well incorporated.
- Place into a serving dish and enjoy, or chill in the refrigerator to chill until you're ready to serve.

- If you love your potato salad extra creamy add a little more mayonnaise and salad cream.

What size dish did use for this potato salad recipe?
Hi Gina, The serving dish i used for this recipe is around 40 x 28 cm but you could use any serving dish you have to hand our even a pyrex roasting dish if you have one.
