Instructions
Add the mayonnaise, 2 teaspoons of curry powder, cinnamon, mango chutney, and golden raisins to a medium mixing bowl.
6 tablespoons mayonnaise,
2 to 3 teaspoons mild curry powder,
½ teaspoon ground cinnamon,
2 tablespoons mango chutney,
2 tablespoons golden raisins
Season with black pepper and stir until the sauce is smooth and evenly combined.

Add the shredded chicken and stir until it is completely coated in the curry sauce.
3 cups shredded cooked chicken
If the filling seems too thick, stir in 1 tablespoon of water. Add the remaining tablespoon only if needed.

Taste the coronation chicken and add more curry powder as desired.
Slice the sandwich rolls in half. Spread the cut sides with softened butter, if using.

Place a layer of lettuce on the bottom half of each roll.
½ head green leaf lettuce
Divide the coronation chicken evenly among the four rolls.
Add another lettuce leaf, cover with the top half of each roll, and serve.
Notes
Tips and Tricks
Rotisserie chicken works well and makes this recipe especially quick.
Begin with 2 teaspoons of curry powder, then add more after tasting.
For the best texture, drain any excess liquid from the mango chutney before adding it.
The chicken filling can be prepared up to 2 days ahead and stored covered in the refrigerator.
Assemble the sandwiches shortly before serving so the rolls and lettuce stay fresh.
