These chocolate chip Dalgona cookies are perfect for any Dalgona coffee morning. They taste absolutely delicious and were a huge hit at my coffee morning.
In a mixing bowl add in the instant coffee granules, sugar and hot water.
2 tbsp Instant coffee, 2 tbsp Granulated sugar, 2 tbsp Hot water
Whisk the ingredients until it is a light fudgy color and is the constancy of whipped cream. This should take a few minutes to whip up. Set to one side.
To Make the Cookies
Preheat your oven to 175 degrees.
In a large mixing bowl or stand mixer add in the butter,caster sugar, soft brown sugar, 3 heaped table spoons of whipped Dalgona coffee, vanilla extract and milk.
140 g Butter, 100 g Soft brown sugar, 100 g Caster sugar, 1 tsp Vanilla extract, 3 tbsp Whipped Dalgona coffee, 2 tbsp Milk
Mix the wet ingredients until it looks thick creamy and has a fudgy color to it.
Next sift the flour and cocoa powder into a separate Pyrex bowl.
200 g Plain flour, 40 g Cocoa powder
Add in ½ a teaspoon of baking powder and ½ a teaspoon sea salt and give it a quick stir.
½ tsp Sea salt, ½ tsp Baking powder
Add the dry ingredients half now and half once you have given it a bit of a mix. Then mix until all the ingredients are well incorporated.
Lastly add in the chocolate chips and hazelnuts and give it one last mix.
25 g Chopped hazelnuts, 150 g Chocolate chips
Grab yourself a cookie sheet. Make 12 cookie dough balls, I use a medium sized cookie scoop to make my dough balls (remember to space the cookies out evenly as they expand slightly when the are being baked).
Press the top down lightly on each cookie and shape it. try not to put too much pressure on the dough as we want it to expand slightly in the oven.
Bake the cookies in your pre-heated oven for 10 minutes.
Once baked leave for a few minutes on the cookie sheet before moving them to a wire rack to finish cooling.
Serve and enjoy.
