Wash and scrub the potatoes thoroughly. Remove any sprouts or blemishes. If the potatoes are large, cut them in half or quarters for even cooking.

Place the potatoes and garlic cloves in a large pot of cold water. Add 1 tablespoon of sea salt.

Bring the water to a boil, then reduce to a gentle simmer. Cook until the potatoes are tender when pierced with a fork, about 12-15 minutes.
Drain the potatoes in a colander and return them to the pot. Add the butter and toss gently, allowing the residual heat to melt the butter and coat the potatoes evenly.

Season with a pinch of sea salt and black pepper. Sprinkle with fresh dill or parsley and serve warm.
