Instructions
Toast both slices of bread in a toaster or on a pan until golden and crisp.
2 Slices Your favorite bread
Once toasted, spread a generous layer of hummus over one or both slices of bread while still warm.
3 Tablespoons Hummus
Layer on the salad greens, cucumber slices, tomato, and any optional extras like red onion or avocado.
1 Handful Rocket leaves or mixed salad greens,
¼ Cucumber,
1 Small Tomato,
¼ Red onion
Sprinkle with a little salt and pepper. Add a drizzle of apple cider vinegar or olive oil if you like.

Top with the second slice of bread, press gently, and slice in half.
Serve immediately and enjoy while the toast is still warm and crispy!
Notes
Tips & Tricks
