Place the new potatoes in a pot of cold water and boil them for about 20 minutes, or until you can easily pierce them with a fork.
Add a little olive oil to your roasting dish.

Pour in the potatoes and toss them to ensure they're lightly coated with the oil.
Gently press down on each new potato with a potato masher or fork to split the skins and crush them slightly.
Sprinkle your potatoes with mixed herbs and salt (sometimes I also add lemon rind and chives).

Pop your potatoes onto the middle shelf of your preheated oven at 200 degrees Celsius for 20 minutes or until they turn golden and crisp. Now all that's left is to serve.
