The first time I cooked with saffron, I was making saffron rice. I had heard about saffron’s reputation—its staggering price, its labor-intensive harvesting process—but until that moment, I hadn’t fully appreciated just how special it was. Saffron is derived from the flower Crocus sativus, commonly known as the saffron crocus. Each flower produces only three delicate stigmas, which must be harvested by hand. The majority of the world’s saffron comes from Iran, though Spain, India, and Greece also produce high-quality varieties. It takes around 75,000 flowers to produce just one pound of saffron, which explains why it’s often referred to as “red gold.”

Saffron’s high cost is a direct result of its labor-intensive harvesting process. Each crocus bloom must be picked by hand, and the fragile stigmas carefully separated and dried. There’s no way to mechanize the process without damaging the spice’s quality. Additionally, saffron crocuses bloom for only a short period each year, making the harvest time-sensitive and labor-intensive. Because of its high price, saffron is often subject to adulteration, with low-quality imitations or dyed threads passed off as the real thing. That’s why it’s crucial to buy saffron from reputable sources.

Like all spices, saffron needs to be stored properly to maintain its potency. Keep it in an airtight container, away from direct light and moisture. A cool, dark pantry is the best place. Properly stored, saffron can retain its vibrant color and aroma for up to two years, though fresher saffron always yields the best results.
