Blueberry porridge is one of the most warming and comforting breakfasts to eat during the winter months. Also, it’s a healthy breakfast recipe that’s quick and simple to make and only requires a few store cupboard ingredients. Blueberries bring rich, colorful, and sweet antioxidant goodness to your morning breakfast routine.

When are blueberries in season?

You’ll normally find blueberries growing in hedge rows from June till early September. You’ll usually see an increase in blueberries on supermarket shelves when they are in season. If you’re lucky enough to have blueberries growing near you, definitely take advantage of picking them yourself, as the price in supermarkets can be quite expensive.

Can you freeze blueberries?

The great thing about blueberries is they are a fantastic berry for freezing. Simply wash and dry the blueberries after picking, lay them on a baking sheet, and freeze. Once frozen remove your blueberries from the freezer and place them in a reusable zip lock bag or a freezer-proof container with a lid (don’t forget to add the date you froze them). Blueberries can be stored in the freezer for 6 to 12 months; they can be frozen for longer, but for optimal flavor, I would recommend consuming them within a year of freezing.

Eating blueberries is linked with improved vision and combating age-related degeneration in the eyes. Blueberries are also linked with helping to regulate blood sugar levels, preventing heart disease, and even helping those suffering from digestion problems.

For the porridge you’ll need

Instructions
 

  • Place the 50g of oats into a saucepan then add 300mls of milk.
    50 g Porridge Oats, 300 ml Milk
  • Then simply bring your porridge mix to a boil and then let the porridge simmer for 3-4 minutes on a low heat, keep stirring through the cooking process so that the porridge cooks evenly.
  • When there are about 3 minutes left of cooking time on the porridge add in a pinch of salt. Then grab a small saucepan and add 40g of blueberries, a dash of lemon juice, 1 tablespoon of water, and 1 teaspoon of soft brown sugar and cook them on medium heat. Press a few of the blueberries with a spoon while stirring to help release some of those gorgeous blueberry flavors.
    ⅛ tsp Salt, 40 g Blueberries, 2.5 ml Lemon Juice, 1 teaspoon Soft brown sugar
  • Don’t forget to stir the porridge while cooking the blueberries.
  • Take both the porridge and blueberries off of the heat and let them stand for 1 minute.
  • Grab yourself a bowl and fill with the porridge then simply top it off with the blueberry compote.

  • Now all that’s left to do is stir and enjoy.
